Just outside of Belleville, ON, is Signal Brewing Company. Located on the site of Corbyville’s historic distillery district, the brewery sits beside the Moira River, adding to the atmosphere.
Walking through the front door was a little overwhelming as you try to take in all the sights of this historic building. Immediately in front of you is the Bottle Shop offering the core selection of the beers available. To the left is the brewing room and to the right is the tap room. The tap room is the largest area of the brewery with ample seating and even a stage for events and live music. The design of the Tap Room incorporates much of the history of the building which was used to store grain for Corby’s distillery which later partnered with the J.P Wiser’s.
I have had a fascination with Signal since I first experienced their Volt, which is a fruit sour that changes regularly based on the fruit. The Volt has taken on a variety of flavours from Strawberry-Rhubarb, Cherry, and Blackberry. Each particular version is a fantastic sour and a great way to finish off a tasting or begin one. The Volt itself, regardless of the fruit used within it, has a smooth finish that makes you always enjoy your next sip. Each fruit adds to it a different aspect to the taste. Blackberry adds a mild tart taste to the beer while cherry adds a fruity flavour without the bitterness.
When I received my first glass of FireWire I was slightly confused as to what I was going to be drinking. This hazy IPA looks like it would have a very fruity taste, however, it is another one of the beers that Signal creates that changes regularly. The deciding factor for the FireWire is the type of hops used. Each release offers subtle differences the Simcoe hops adds a bright citrus flavour with slightly earthy undertones. Whereas one of the more recent releases use Citra hops and offers a profile that adds citrus, lime, grapefruit and a bit of harshness to the tasting.
Signal Brewing Company is a brewer and location that is worth the time to visit. I would highly recommend you checking it out or simply finding a tour that would bring you to there.
